its been such a journey. baking has become the biggest priority for me! i cant believe it has all come to what it is today. hard work pays off & esp if you put your heart into achieving your dreams!

i didnt want to make a christmas theme as its SOOOOOOO far away from us atm! i love gingerbread! nomnomnom!!!

have a go. courtesy of my teacher michelle's special recipe. it works like a charm:

gingerbread house dough (1 gingerbread house)

ingredients:

300g butter
500g castor sugar
100g golden syrup
900g plain flour
15g ground cinnamon
7.5g ground nutmeg
1.5g ground ginger
pinch of salt (optional)
10g bicarbonate soda
200-250ml cold water
lemon/orange zest or cardamon is optional too*

with the spices. you can actually vary them to how strong you want the flavour. i love the ginger flavour so i put more in heehee!!! :]

method:

cream butter & sugar & syrup
sieve all dry ingredients
rub in butter/syrup mixture until the mixture resembles breadcrumbs
make a well in the breadcrumbs, and ass cold water to mix and knead into a smooth paste - note: DO NOT OVER WORK IT.
tightly gladwrap the dough, press it down into a rectangular shape, and rest it in the fridge for at least 24hrs. this allows the flavours to mature and become more distinctive :] yumyum!
after: powder your bench with some plain flour and roll out the dough to the thickness you want. u dont want any thicker than approx 5-6mm i reckon. the dough comes out pretty thick.
then bake it @ 170-180degrees till golden brown.
have your stencils rdy. once the cooked dough is out, you want to cut it straight away before the dough hardens!

got an order from her husband for a surprise cake! we had to take this cake with us from 6am in the morning till 7pm (so it was in the car whilst on our car-trip to venus bay, it survived luckily!) =D

i thought id make a mud cake so it will hold! and not able to use chocolate or sugar for garnish (as it will melt in the car) i thought of using tuile :] ive always wanted to make flowers with tuile .. so i attempted it. first attempt. i will continue to practice making better blossoms!!!! a goal for 2010 shall we say? =P

this was a donna hay recipe. awesome stuff! :]

chocolate & orange mud cake

ingredients:

375g butter, softened
1 1/3 cup brown sugar
3 large eggs
Zest of 2 tangerines ( i used oranges)
300g plain flour, sifted once
1/2 tsp baking powder
80g cocoa powder, pass through a tea strainer
200g good quality bitter dark chocolate, melted over a double boiler
3/4 cup (180 ml / 6 fl oz) milk

Method:

Preheat the oven to 160°C.
Grease a 10'' springform pan and line the bottom and sides with baking paper.
Place the butter and sugar in the bowl of an electric mixer and beat for 8-10 minutes, or until the mixture is light and creamy.
Gradually add the eggs and beat well.
Add in the zest and beat again.
Fold through the flour, baking powder, cocoa and melted chocolate and stir in the milk.
(i actually like to stir in my melted chocolate after the eggs .. mix the cocoa in milk to form a paste - just a thing i have! XD)
Pour the mixture into the prepared tin and bake for 75 minutes or until cooked when tested with a skewer.
Cool in tin completely.

god i cant remember how relaxing it is to sleep in, no work, eat, laze around @ home : *thumbsup* ^________^ christmas period was crazy!!! my sister's bf was comin over for xmaseve dinner so i thought id whip up a dessert plate for everyone :] i didnt have time to "plate it up" nicely bec everything was melting so fast -_______-

-portugese tartlet topped with fresh raspberries
-chocolate mousse with cocoa dust
-greentea icecream bedded with white chocolate almond meal and chocolate ganache
-black sesame meringue biscuit

these took me a good 4hrs! doesnt look like much but the process is long!

my speciality: banana cake for xmas :]

day before xmas eve: apparently its a big celebration day for chinese ppl. so we made homemade 'tong yuen' :]

my catchup class on the week of xmas (geez!) hahaha this was all the way from stage three week one .. so like last term!! i had to do a re-sit prac bec i missed out on this class.

recipe request: macaroons :] as we had no demo for this day, i was panicking bec i didnt what to do with the macaroons .. luckily i search up a quick 'how to make macaroons' on youtube before class and it saved my life! hahaha i find the trick is to have:

a smooth batter - but not to knock out the air in the egg whites.
temperature is important (and esp ur ovens, you may have hot spots, so be careful)
the batter should not be a very runny consistency - just enough to hold its shape
once its piped out, allow it to rest on the tray for at least 20mins to dry out

i looked up my classmate's photos from last term when they had made macaroons, the recipe didnt look very pretty = the teacher said this recipe wasnt a good one, but i reckon they turned out nice!? (go youtube!) so give it a go:

macaroons

ingredients:

150g very finely grounded almonds (almond meal)
200g pure icing sugar
120g egg whites (4x55g)
50g caster sugar
few drops of vanilla essence
pinch of creme of tartare (this will help to hold the meringue in shape ;])

method:

sift almond meal (make sure its lump free)
sift icing sugar
place egg white and creme of tartare in mixing machine and beat to soft foam
sprinkle caster sugar and vanilla essence (this is the time to add any flavours you want to your macaroon)
whisk till light and firm
sift icing sugar and almond meal into the egg whites. fold carefully~
spray a tray and line with baking paper
place a piping bag fitted with a 1cm plain tube and pip even sized half-spheres (2.5cm in diameter)
leave macaroons to dry for 2omins
bake in oven at 185degrees for 15mins (i put mine on 180 - took less than 15mins!)
allow to cool and dry then remove from baking tray
store macaroons in an airtight container - can last for 5days unfilled.

with the filling, i just made some rich chocolate ganache.

little sister asked me to bake her something for her school project. she had to construct a model of her 'business'. she made a sweets cafe called 'sweet sweet haven' :] so i thought why not try some little chocolate tarts? kids love chocolate :] i baked an extra batch, hoping to bring it along to my frd's 21st dinner, but unfortunately it was cancelled =( but everyone at home is loving them!!! great hit! ;] i might make these for christmas!! they look pretty christmasy ^________^

god im so happy to say: FINALLY IT WAS OVER! =D it had been 3weeks of stressful hard work for our school buffet. i had so much to do! took me a while to think of what design would best suit for our buffet - french theme; decorations, labels, posters and invitations etc

we needed a showpiece .. so this is what i came up with: it is suspose to represent the eiffel tower in a way~ observe it closely .. (if it does look like it somehow) =P hahahhaha i was so shattered bec on the buffet day, i was driving, and the showpiece tumbled over =( so it wasnt as good as this for the buffet. luckily i could patch it all up in time!!

i have this thing about garnishing my desserts with bananas or oranges .. i just dont think it looks appetising (in my opinion) XD but what could i do if i only have bananas in this case?? -_____- so i attempted to make a banana rose; which turned out ok surprisingly! so i carmelised a banana slice for the leaf as well :] and put a ganache over the pudding just to make it look extra pretty&shiny to eat!

great recipe from my teacher *thumbs up*

panada

ingredients:

250ml cold milk
50g caster sugar
65g plain flour
90g dark chocolate

method:

whisk milk, sugar + flour in a pot over stove
cook till thicken
remove from heat
stir in chocolate to melt

souffle

ingredients:

4 egg yolks
4 egg whites
75g caster sugar

method:

add egg yolk to chocolate base mixture
whisk egg whites + sugar till soft peak
fold 1/3 of egg white into choc base
fold in remaining egg white into choc base
pour into ramekins and bake at 180 degress - 8-10mins
dust with icing sugar. serve immediately :]

tips:

before you start, butter your ramekins and set in fridge.
preheat your ovens.

had a big project this week!!! 2 bday cakes + 100 cupcakes to go!! took up 3days of my tired life but it was all worth it in the end :] success! thanks agn to my wonderful sister who helped me too :] *muahs* heehee!!!

there was 50 vanilla and 50 chocolate all frosted with dark chocolate buttercream :]

took me some time to design. the party was a 'duty in line' yet 'erotic' party .. so i thought of these: it was a selction of bras, g-strings, hearts, bows, roses :]

off to be delivered! yay!

chocolate & orange brulee

chocolate & orange brulee (cappuccino) LVL☆☆☆

ingredients:

1 orange
20ml grand marnier
1 vanilla bean
250ml milk
40g cocoa powder
120g egg yolk (6)
80g castor sugar
250ml cream
50g caster sugar

method:

peel and segment orange. macerate in grand marnier.
split vanilla bean + heat in milk with sifted cocoa
allow to infuse for 10mins
strain + cool
mix egg yolks and sugar together with cooled milk
gently mix in the cream
place orange segment in bottom of ramekin moulds
pour brulee in
oven poach (in a water bath) at 100 C for 50-60mins
remove + cool completely
sprinkle lightly with sugar (and you will get better results if you sprinkle alittle brown sugar too) to caramelise under hot grill or blowtorch!

sabayon:

80g egg yolk (4)
50ml creme de cacao
20g sugar
50ml milk

method:

mix all ingredients together and cook to sabayon over bainmarie till thick and light.
whisk until cool
deposit foam on top of each brulee.
dust with cocoa if desired :]

Ingredients:

90g egg white (3)
20g vanilla sugar (if you dont have, simply put vanilla bean skin and sugar together)
140g caster sugar
¼ lemon zest

Method:

Whisk egg whites till light fluffy
Add vanilla sugar
Add caster sugar till light foam.
Add lemon zest
Shape quenelles and poach in simmering milk or water!
And serve over vanilla anglaise

i decided to make a batch of yummo brownies for my little sister's school fete! i remembered back in my primary school days, my sister & i would always wish our mum could make something to bring to the school fete .. but it never came true! so now im made these brownies, my little sister can feel special and proud =D

not only were these crowd pleasers at the fete, but at home too!! my aunty couldnt stop eating them! they are one fantastic recipe!!!! give it a go! ive never eatten brownies, i thought it was actually delicioussssssss~ its one of those fudgy AND cakey brownies *thumbs up*

i was doing some research .. and came to the conclusion that 'the baked brownie' had so many reviews - so i thought id give it a shot! perfection!

The Baked Brownie adapted from Baked: New Frontiers in Baking LVL☆☆

Ingredients:

1 1/4 c all-purpose flour
1 tsp salt
2 T dark unsweetened cocoa powder
*3 oz 60% cacao chocolate, chopped coarsely (seriously if u want all these! u can jus use 1!)
6 oz 70 % cacao chocolate, chopped coarsely
2 oz 85% cacao chocolate, chopped coarsely
1 c unsalted butter, cut into 1 inch pieces
1 tsp instant espresso powder
1 1/2 c granulated sugar
1/2 c packed light brown sugar
5 large room temperature eggs
2 tsp pure vanilla extract

Method:

Butter or spray a 9X13 inch glass baking dish or light-colored metal baking pan, set aside.
Fill a medium-sized saucepan halfway and bring to a simmer over moderate heat.
In a large, heatproof bowl, combine chocolate, espresso powder, and butter, stirring occasionally.
Whisk flour, cocoa powder, and salt in a small mixing bowl. Set aside.
When chocolate mixture is melted and smooth, turn off the burner but leave the bowl over the water.
Add sugars to the chocolate, and whisk to combine. Remove bowl from water.
Add 3 of the eggs, whisk until just combined.
Add the remaining eggs and whisk, just until combined.
Add the vanilla and whisk gently, being very careful not to overmix.
Sprinkle flour mixture over the batter and use a spatula (not the whisk) to fold the flour into the mixture, stopping when you see a few remaining bits of flour mixture.
Bake for 25-30 minutes total, rotating pan after 15 minutes. Be careful not to overbake.

there has been a request for this recipe. its another lovely recipe. this shortbread is so soft + delicate that it literally can melt in your mouth! the key to making a good shortbread is not to over-beat the ingredients because you want to keep it a crumby consistency.

scottish shortbread LVL☆

(this recipe will make 1.6kg of dough. you can make 75%, 50% or 30% of it if you like!)

ingredients:

400g unsalted butter
160g castor sugar
200g ground rice (rice flour)
pinch of salt
400g plain flour

Method:

blend butter + sugar to combine. do not aerate or cream it.
add rice flour, plain flour and salt
crumbs will form. this is not a worry. simply press the dough together manually.
chill prior to use.
bake 160C - 40-50mins pale in colour.
dust with icing sugar or serve with jam!

ingredients:

120g unsalted butter
150g dark chocolate
80g brown sugar
200g egg (4), seperated
140g almond meal, lightly roasted
100g caster sugar

Method:

melt butter over bainmarie
add chocolate
remove from heat
add brown sugar
stir in egg yolks once choco-butter mix is cooled
whisk egg white to soft peaks, add caster sugar till smooth
fold 1/3 egg white into choco-buter base
gently fold almond meal
fold remaining egg white through
place into molds
bake 160C - 45mins

i found these will collapse a little so if your using molds, fill them alittle more than 3/4 full :]

ingredients:

125g orange puree (1 orange)
70g unsalted butter
80g egg yolk (4)
50g caster sugar
150g egg white (5)
125g blanched almond meal, lightly roasted
20g besan flour
50g caster sugar

Syrup:

200ml orange juice
75g sugar

_____________________________________________________________

Method:

Poach whole orange for 1hr (make sure the orange is completely covered by water)
Cool and puree
melt butter and stir in puree
whisk egg yolks and sugar till pale
combine yolks and orange mix
whisk egg whites + sugar
combine almond meal + besan flour
fold 1/3 egg white, add almond meal + besan flour mixture
alternate and continue the process till combined ( do not over fold mixture)
bake 170C - 45mins
cool. drizzle or soak cake with orange syrup before serving!

so these are little lemon brulee tartlets. give em a go! nice snack! :]

lemon brulee tartlets LVL☆☆☆

first you will need to make the short sweet pastry.

Ingredients:

200g unsalted butter

100g caster sugar

50g egg

300g plain flourPinch of salt

Method:

Cream butter + sugar
Add egg
Fold flour and salt
forms a sticky dough – wrap + chill prior to use.

lemon brulee

Ingredients:

150g egg
120g castor sugar
1.5 lemon zest
100ml lemon juice
175ml cream

Method:

Combine egg, sugar + zest and whisk gently
Add strained lemon juice slowly
Add cream n mix until combined
Set aside till use
Heat oven 160⁰C
Blind-bake tartshells.
Pour lemon filling into prepared case
Cook for 50-60mins (it could be less than this depending on your oven. don't let it overcook as the pastry will be too dark or the brulee will be too stiff. look for a nice light golden colour and the brulee should just be set at the top.)

fruit tarts~ i can't assemble fruit tarts.. grrr! they do my head in!!!!! hahahaha!!! =( its basically the sweet pastry filled with creme patisserie ;]

another attempt at making a chanel bag for my best-friend's 21st :] the cake turned out alittle FAT. but fed everyone well so that was ok XD the vanilla sponge turned out alittle dry for some reason so that was disappointing for me!!!! grrrrrr! at least the chocolate part and the hazelnut buttercream made it taste better =D was a great night!! everything turned out perfect :]

like i said, sorry i cant afford a REAL one of these babies for you now, but this is close enough =P

my first order for a wedding cake (thanks to my lovely vinna) :] wondered what design to do? a nice&simple one .. although i drew many designs out, i ended doing one not even on the papers! hahaha that always happens to me .. i dont think i can plan much, i do what comes to mind in the heat of the moment~ heehee!! XD this is a chocolate&coffee densecake with mocha cream and topped with sponge :]

found these tiers frm wilton* they are so cool! u can literally fill anything inside. so pretty!

and no. they are not edible flowers this time. they are real flowers =P

few months ago, i got an order to make a mario&yoshi cake. this has been my biggest project yet! it was a difficult one i admit!!!! watta charming young lad planning a bday cake for his lovely girlfriend's special 21st bday :] its so sweet :]

note to carmen: after all this time .. i had no idea it was you who follows my blog! and it was you i was making this cake for!!!!! =O hahahha!! wow. happy birthday!! :]
